The San Juan Capistrano Ecology Center Community Table International sustenance and community building Dinner is Sunday January 24 2016.
Chefs Flemming Hansen and Mette Helbaks of Stedsans and South Coast Farms and Electric City Butcher is featured during Sunday’s January 24 2016 Community Table Dinner.

The Ecology Center Community Dinner is from 4:00pm to 7:00pm.

The Community Table Dinner is a series of dinners that follow the cycle of seasons with two dinners per season.

Each dinner features a renowned chef, a sustainable farmer, and an amazing story.

The Ecology Center Presents a one-of-kind dining and educational experience to support a positive future!

Taste the true meaning of clean, simple, and local.
The visionaries behind Stedsans will be applying their expertise to locally sourced California produce to curate a truly unique meal and conversation.
For Stedsans and The Ecology Center, healthy ecosystems start with healthy food.
And healthy food is only possible with the support of a vibrant community.
This month’s conversation revolves around people and food — around the importance of bringing the earth back to the table.
We all have a common need for sustenance and together we can realize a future where nutritious food is abundant.

Community Table Menu*:

Raw Veggies with Smoked Sour Cream and Homemade Crackers
Roasted Cauliflower, Browned Butter, Almonds, Abricots, Arugula and Parsley
‘Krebinetter’ – Danish Pork Patties with Carrots, Onion and Cabbage
Grilled Romaine with Blue Cheese, Walnuts and Grilled Citrus
Lemon Mousse with Cream, Chocolate and Navel Oranges

About Chefs Flemming Hansen and Mette Helbak:
Chef Flemming Hansen has been a restaurateur for almost 20 years, as owner and executive chef of several top eateries with a focus on sustainability.
Mette Helbak has extensive experience running restaurants and currently works as a chef, food writer, food stylist and recipe developer.
This husband and wife team are the founders of an entirely unique restaurant.
The dining room at Stedsans can be found in the greenhouse of Scandinavia’s first rooftop farm, ØsterGRO.

About The Ecology Center Sourcing Partners:
For this meal, Chefs Hansen and Helbak will be working with The Ecology Center neighbors South Coast Farms.
South Coast Farms has been an organic leader in the region, farming the 26 acres adjacent to The Ecology Center for 20 years.
Protein will be sourced from Electric City Butcher in Santa Ana.

Community Table is a unique experience that’s part farm-to-table dinner and part education, where you will enjoy delicious local food and meet the rancher/farmer and chef who are responsible for the making of your meal.

A portion of your ticket to Community Table supports the creation of a new sustainable cookbook that features recipes from the dinner and complete background and stories about the ingredients.

Community Table chefs and farmers will share tips to help us bring the philosophy of farm-to-table into our everyday.
